Crockpot Rocky Road Dump Cake

Crockpot Dessert Recipes

Did you know that you could make a cake in a crock pot? This Rocky Road Crockpot Cake is an easy slow cooker dessert that is loved by everyone who tried it. Made with a box cake mix and chocolate pudding, take it to a whole new level with a scoop of vanilla ice cream on top!

Crockpot Rocky Road Dump Cake

I have become obsessed with my crockpot over the last couple of months. I love being able to combine ingredients in the morning and by dinner time all I have to do is scoop and serve. After I pick up the boys from school I’m not always a fan of hanging out in the kitchen for an hour prepping dinner. It’s so nice to just be able to take things easy in the moments before my husband gets home instead of rushing to get something cooked.

There are a number of crock pot dinner recipes that the kids love and recently made our first crockpot dessert made with a box of chocolate cake mix. This crockpot chocolate cake doesn’t take a lot of work to prepare. Unlike a typical cake you don’t have to spend time frosting it.  This is one of the easiest cakes I have ever made, and can be made and served in just a few hours.

If you have friends coming over for dinner, put all of the ingredients in the crockpot when you start dinner. By the time you and your guests are ready for dessert the cake will be done. The rocky road dump cake was a huge hit and I will definitely be making it again.

How to Make a Cake in a Crock Pot:

This crockpot cake recipe is fairly simple and is made with a box cake mix. It takes just a few minutes to prepare all of the ingredients and then dump them all into the crockpot and set the cook time. Just make sure to lightly spray your crockpot with cooking spray so that the dump cake does not stick to the sides. The warm moist cake reminds me of a chocolate lava cake.

  • 1 3.9-oz. package chocolate instant pudding mix
  • 3 large eggs lightly beaten
  • 1 cup sour cream
  • 1/3 cup butter melted
  • 1 teaspoon vanilla extract
  • 3 1/4 cups milk divided
  • 1 3.4-oz. package chocolate cook-and-serve pudding mix (I used vanilla since we already had it at home)

  • 1 1/2 cups miniature marshmallows
  • 1 cup mini chocolate chips

Instructions

  • Beat cake mix, instant pudding mix, eggs, sour cream, butter, vanilla, and 1 1/4 cups milk at medium speed with an electric mixer for 2 minutes. Pour batter into a lightly greased crock-pot.
  • Cook remaining 2 cups milk in a small saucepan over medium heat, stirring often, 3 to 5 minutes or just until bubbles start to appear (do not boil); remove from heat.
  • Sprinkle cook-and-serve pudding mix over batter. Slowly pour hot milk over pudding. Cover and cook on LOW 3 1/2 hours.
  • Heat pecans in a small nonstick skillet over medium-low heat, stirring often, 3 to 5 minutes or until lightly toasted.

The rocky road cake is amazing by itself but is even better served with a scoop of  ice cream!
