Crock Pot Creamy Tuscan Garlic Chicken

 

Dinner time is a constant struggle in our house with the never ending sports practice and games. This past month they added another hockey practice a week onto my 9 year old’s schedule which means goodbye quiet Monday nights. It’s now just another day of the week when I have to rush to feed the kids dinner and be out of the house by 5 pm.

Most days I spend juggling my time trying to work from home and entertain a toddler before the 3pm afterschool rush begins so the quick and easy dinners make the nights go by a lot smoother. My favorite meals are crock pot meals, I can prep them earlier in the day or even a month beforehand (see our crock pot freezer meals), and then at dinner time they’re ready to go.

This Crock Pot Creamy Tuscan Garlic Chicken is a favorite and is so easy to make, you can easily turn it into a freezer meal by placing all the ingredients, minus the spinach, in a zip lock bag and freeze until ready to use.

Crock Pot Creamy Tuscan Garlic Chicken

Ingredients:

  • 1 Tbsp olive oil
  • 3-4 boneless, skinless chicken breasts
  • salt and pepper
  • 2 (15 oz) jars Alfredo sauce
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 (6 oz) bag baby spinach
  • 1 cup mushrooms (optional)
  • pasta (cooked according to directions on box)

Directions:

Heat the olive oil over medium-high heat in a skillet. Season chicken with salt and pepper and cook 3-5 minutes on each side, or until browned on both sides.

Remove chicken from skillet and place in the crock pot. Top with Alfredo sauce, diced tomatoes, Parmesan cheese, garlic powder and Italian seasoning. Mix.

Cook on low 3-4 hours.

Add in baby spinach & mushrooms, and cook additional 5 minutes.

Serve over your favorite pasta.

Instructions
