Crock Pot Creamy Garlic Chicken

Creamy Garlic Chicken made in the slow cooker is the perfect weeknight dinner! The chicken breast simmers all day in a creamy garlic Alfredo sauce with spinach and tomatoes and is served over favorite pasta. This easy dinner recipe is adult and kid approved!

Dinner time is a constant struggle in our house with the never ending sports practice and games. This past month they added another hockey practice a week onto my 9 year old’s schedule which means goodbye quiet Monday nights. It’s now just another day of the week when I have to rush to feed the kids dinner and be out of the house by 5 pm.

Most days I spend juggling my time trying to work from home and entertain a toddler before the 3pm after school rush begins so the quick and easy dinner recipes make the nights go by a lot smoother. My favorite meals are crock pot meals, I can prep them earlier in the day or even a month beforehand (see our crock pot freezer meals), and then at dinner time they’re ready to go.

This Creamy  Garlic Chicken is a family favorite and is so easy to make, you can easily turn it into a freezer meal by placing all the ingredients, minus the spinach in a zip lock bag and freeze until ready to use.

Creamy Garlic Chicken Recipe

Ingredients:

  • 1 Tbsp olive oil
  • 3-4 boneless chicken breasts
  • salt and pepper
  • 2 15 oz jars Alfredo Sauce
  • 1 14.5 can diced tomatoes
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup mushrooms (optional)
  • pasta (cooked according to directions on box)

How to make this Creamy  Garlic Chicken in the crock pot.

Heat the olive oil over medium-high heat in a skillet. Season chicken with salt and pepper and cook 3-5 minutes on each side, or until browned on both sides.

Remove chicken from skillet and place in the crock pot. Top with Alfredo sauce, diced tomatoes, cheese, garlic powder and Italian seasoning. Mix.

Cook on low 3-4 hours.

Add in baby spinach & mushrooms, and cook additional 5 minutes.

Serve over your favorite pasta.

*To make this Creamy Garlic Chicken a crock pot freezer meal, place all ingredients except pasta, spinach and mushrooms into a gallon sized Ziploc bag. Seal closed and place in freezer. When ready to use thaw in fridge overnight and empty contents into a crock pot. In the last 5 minutes, add the spinach and mushrooms.

  • 1 6 oz bag baby spinach
  • 1 cup mushrooms optional
Instructions
  1. Heat the olive oil over medium-high heat in a skillet. Season chicken with salt and pepper and cook 3-5 minutes on each side, or until lightly browned on both sides.
  2. Remove chicken from skillet and place in the crock pot. Top with Alfredo sauce, diced tomatoes, Parmesan cheese, garlic powder and Italian seasoning. Mix.
  3. Cook on low 3-4 hours.
  4. Add in baby spinach & mushrooms, and cook additional 5 minutes.
  5. Serve over your favorite pasta.

    I have to try this so I pinned. My youngest daughter who wants everything with garlic, will love it. I think all of us would enjoy it but I won’t be able to add the mushrooms. Can’t see to get the kids to like them yet.
