BBQ Beef Cups Recipe Made with Refrigerated Biscuits

Appetizer Main Dish Recipe

 BBQ Cups is a simple recipe for an an easy weeknight dinner. Start with refrigerated biscuits pressed into a muffin pan and stuffed with a meat mixture consisting of ground beef, BBQ sauce, and topped with shredded cheese. These ground beef and biscuits are incredibly easy to make and kids love them!

When I first moved down to Virginia, my roommates from Arkansas and Louisiana introduced me a variety of recipes. One ground beef recipe in particular that my roommate always prepared was biscuits filled with barbecue meat.

What can I make with ground beef and biscuits?

I made these ground beef stuffed biscuits for my children one day and they’ve been hooked ever since. Their favorite part is the biscuits, and love anytime I make recipes with biscuits. I can’t complain, they take after me with my love for refrigerated biscuits. The kids love being able to eat the BBQ cups with their hands since you can pick up them right up and bite right in. Meals made in a muffin tin are perfect for on-the go as they fit right in their hand and can be eaten like a cupcake.

This easy stuffed biscuit recipe made with hamburger, shredded cheddar cheese, and barbecue sauce is an easy weeknight family dinner. It can also be made as an appetizer for game day or party since no utensils are needed. Just grab one and bite in!

BBQ Beef Cups

What you need to make this ground beef biscuit recipe.

  • ¾ pound ground beef
  • ½ cup barbecue sauce
  • 1 tablespoon minced onion
  • 2 tablespoons brown sugar (optional)
  • 10-ounce pkg canned biscuits
  • ¾ cup shredded cheddar cheese
  • 1 tablespoon flour

How do you make BBQ Beef Cups?

  • Preheat oven to 400 degrees.
  • Cook the ground beef in large skillet over medium heat the stove, until browned. Drain. Add in your favorite BBQ sauce, minced onion and brown sugar.
  • Lightly spray muffin tin with cooking spray. Separate and flatten the refrigerated biscuit dough. (I use a rolling pin coated in flour so the dough doesn’t stick)
  • Press each flattened biscuit into the muffin cups.
  • Spoon the meat mixture into each and sprinkle with cheese
  • Bake at 400 degrees for ten minutes or until biscuits are golden brown.

These BBQ Cups topped with cheese are one of our favorite dinner recipes with refrigerated biscuits. I’ll usually double the recipe so that the kids can have the mini bbq muffin cups for lunch the next day.

BBQ Beef Cups are an easy ground beef bbq recipe made with Pillsbury biscuits and a muffin pan. Easy weeknight dinner or game day appetizer.

Ingredients

  • ¾ pound ground beef
  • ½ cup barbecue sauce
  • 1 tablespoon minced onion

  • 1 10 ounce refrigerated biscuits (regular size, not Grands)
  • ¾ cup shredded cheddar cheese
  • 1 tablespoon flour

Instructions

  • Brown the ground beef in a large skillet over medium heat until browned, drain. Add in your favorite BBQ sauce, minced onion and brown sugar.
  • Spray muffin pan. Separate and flatten refrigerated biscuits
  • Press each flattened biscuit into a muffin tin
  • Spoon the meat mixture into each and sprinkle with cheese
  • Bake at 400 degrees for ten minutes or until biscuits start to brown.

Notes

To flatten out biscuits, use a rolling pin coated in flour so it doesn't stick.
