This week I was on a roll with this whole Meal Planning thing. I have my good weeks and my bad weeks but things are so much less hectic when I plan ahead. It’s hard with the kids and their crazy soccer and hockey schedules since we have to be out of the house by 4:15 pm a couple nights a week, which means giving the kids a small serving of dinner at 3:45pm and the rest at 7pm. With all of the running around they can’t last until 7pm without dinner and I don’t want them to eat a bunch of snacks in between practice and games to feel full.

This week I turned to a couple of our favorite one dish meals, Tomato Basil Pasta with Grilled Chicken & Chicken Devine. Both require grilled chicken, so I made sure to grill enough chicken for both meals ahead of time, saving even more time during the busy after school rush. With all the ingredients already on hand, and the chicken pre-cooked I can just dump everything into one dish, and toss it into the oven to bake.

5 minutes to prep + 40 minutes to bake.

With the chicken pre-cooked this family meal only takes about 5 minutes of prep time to preheat the oven, chop up the tomatoes, open a box of pasta and measure the 5 other ingredients.
